A twelve-seat counter. A single ingredient that arrived at dawn. Seven courses that cannot exist tomorrow.
Each evening begins before dawn on a ridge above Mae Chan. The chef — or a farmer who has been supplying the kitchen for eleven years — arrives with whatever arrived that morning. Galangal still warm from the soil. River prawns still moving. Coconut cream skimmed an hour before.
The menu is written after the ingredient arrives, not before. Twelve guests discover the evening's subject at the counter, in the first minute, when the chef sets down a single raw specimen and says nothing.
The counter holds twelve seats. It fills on the day the menu is announced — usually forty-eight hours in advance. There is no standing reservation. There is no guarantee of repetition.
Galangal
Still crusted with soil from the ridge above Mae Chan. The chef peels it with a thumbnail, not a knife. The perfume alone is the first course.
Coconut & Galangal
Skimmed at four in the morning. The cream sits on top like a secret. Galangal sliced thin as paper, bruised not cut.
Fermented Galangal
Three weeks in a clay jar, then charred over coconut shell. What fermentation does to galangal is what age does to grief — it deepens everything.
Galangal & Lime
Still twitching at six. By seven they are wrapped in banana leaf with galangal, kaffir lime, and the kind of silence that means respect.

Galangal & Pork
A northern curry that takes three days to make and three minutes to finish. The galangal here is not a note — it is the entire chord.
Sticky Rice & Galangal Oil
Steamed in a bamboo basket since morning. Served with a single spoonful of galangal-infused oil pressed that week. Nothing else. Nothing needed.
